All the ingredients for the meal are available at Metro Detroit area Whole Foods Market stores and at Detroit area Kroger stores that have a Natural Foods section. 1 loaf crusty Italian style bread
1 bag lettuce
1 bottle organic vegan salad dressing (Italian works well)
1 jar tomato pasta sauce (Muir Glen Organic makes several varieties)
1 1lb. box rigatoni or penne pasta
1 bag shredded vegan mozzarella style “cheese” (or what ever flavor you prefer)
1 canister vegan Parmesan “cheese”
Sorbet of your choice
organic berries (raspberries or blueberries)
vegan ice cream (Purely Decadent is really good)
vegan chocolate syrup (Whole Foods Market carries Ah’Laska brand)
Preheat oven to 350º
Spray 9×9 inch square baking pan with non-stick spray or grease with olive oil
In large pan bring three quarts of water to the boil. Add 1-2 Tbs salt and stir.
Add ¾ of the box of pasta, stir, bring back to the boil, reduce heat slightly so that it does not boil over and boil according to package directions. Cook for 1 minute less than box says. When timer goes off, bite into a piece of pasta to make certain it is done, but not mushy.
Drain pasta and return to pan. Stir in pasta sauce.
Place pasta in baking pan. Top with vegan mozzarella, you probably won’t need the whole bag.
Sprinkle vegan Parmesan on top of pasta. Bake for 35 minutes, or until golden brown. Serves 6
To Heat Bread:
After pasta is done leave oven on 350º
Place bread on baking sheet and bake for 7-10 minutes depending on size of loaf.
Slice and serve immediately. Be careful not to get burned.
To prepare meal:
Delegate jobs to family members.
Rinse lettuce under cold water. Pat dry with paper towel and refrigerate.
While bread is heating, place lettuce in salad bowl and pour salad dressing into separate serving dish.
Serve main course
Clean up after meal.
