This was a true Cupcake Wars challenge! The gauntlet was thrown to make a cupcake out of something green – and here it is! This recipe is for a spinach and strawberry cupcake topped with goat cheese frosting. The cake is moist and dense and the strawberries add a wonderful flavor.
Goat cheese is a mild, white cheese which blends well with cream cheese. The taste is a little tangier, so it adds a wonderful dimension to ordinary cream cheese frosting. Most larger stores carry goat cheese (usually in 4-ounce packages) in their cheese section. (In Grand Rapids, Meijer stores carry it along with their better cheeses.) Look for the original flavor – this is important, as you don’t want garlic or herbs in your frosting.
You will be surprised at how much spinach goes into this recipe. The spinach is cooked, then blended prior to adding to the other ingredients. Although stopping short of calling this a healthy dessert, there are some added vitamins for sure!
Spinach Strawberry Cupcake Recipe
Ingredients for Spinach Strawberry Cupcakes:
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ cup spinach puree
- ½ cup sour cream
- 1 tsp. vanilla
- 2 cups strawberries, chopped into larger pieces
- 1 tsp. cinnamon
- 2 tablespoons flour
- 1 tablespoon sugar
- 1 recipe Goat Cheese Frosting (below)
Directions for making Spinach Strawberry Cupcakes:
Preheat the oven to 350 degrees. Line cupcake tins with paper liners (recipe makes 24 cupcakes).
Put 3 large handfuls of washed spinach leaves in a large saucepan with 4 tablespoons of water. Bring to a quick boil, then simmer for 5 minutes. Pour the water and spinach in a blender and blend until smooth. Measure out ½ cup and set aside.
In a large mixing bowl, cream together the butter, sugar and eggs. Add the flour, baking powder, baking soda, and salt – mix well.
Add ½ cup of the spinach puree, and sour cream, and the vanilla. Mix together until well incorporated.
In a small bowl, mix together the strawberries, cinnamon, 2 tablespoons flour, and 1 tablespoon sugar. By hand, stir the strawberry mixture into the spinach mixture.
Bake at 350 degrees for 20 minutes. Remove from the oven and allow to cool in the tins. After completely cooled, remove from the tins and frost with Goat Cheese Frosting (below).

Goat Cheese Frosting Recipe
Ingredients for Goat Cheese Frosting:
- 8 ounces goat cheese, softened
- 8 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1 tsp. vanilla
- 2 cups powdered sugar
Directions for making Goat Cheese Frosting:
Place all ingredients in a large mixing bowl and whip until smooth.
