Bibi’s Patisserie is a pastry house opened in Lafayette, La about one month ago specializing in baked goods that are gluten free, vegan, organic or sugar-free. How exciting to have someone catering to such a specialized group of people. The owner, Nathan Raffael, was kind enough to retell his story of how his shop came to be. Apparently, he was baking out of his home and made a vegan dish that his customers loved. He didn’t tell his customers that it was gluten free at first but eventually he did. It seemed like his customers kept reporting to him that they knew someone who needed a gluten free diet and that “gluten free” word just kept appearing over and over. After doing research, he finally decided that it was impossible to bake gluten free and with regular flour co-existing in the same kitchen due to the contamination factor and finally decided to just go the gluten free way. He says that he would be doing a serious disservice to his customers by attempting to bake and serve gluten free breads/pastries and regular breads/pastries in his small kitchen. Great Harvest also reported this same conclusion when they spoke to our St. Pius Single’s Ministry group about one year ago. Flour is so fine and a “fine dusting” of powder fills Great Harvest’s kitchen every day. This indeed would contaminate the Celiac person as a strict adherence to the diet is necessary to maintain health and wellness.
My son tried the “Bay tea” with the blueberry muffin and also a blueberry bagel. I tried the sesame seed bagel and the Raspberry tea. Both were wonderful. The bagel was chewy and slightly sweet just like it is supposed to be. The tea room is really cute and the pastries and breads look and smell divine. Just the smells of his little shop can make anyone’s heart smile. We wish him all the success and we will certainly be shopping at his little pastry shop again.
