In honor of today being Great American Backyard Campout Day, let’s explore some easy and healthy foods perfect for camping close to home. The most convenient luxury of camping in your own backyard is that any of those forgotten items are not far away. Not to mention the ability to seek shelter in rain, use your facilitates, and keep your food nice and cold. Being able to keep that food cold expands the culinary possibilities for this family friendly activity.
There are so many easy and delicious meals that can be prepared in your own backyard. The grill can be used to cook just about anything. Although, since you are at home, there are numerous cooking methods available. Why not try something different at tonight’s campout? Throw on some lamb chops or bison burgers for a change from usual steaks and burgers. Lamb and bison are leaner meats that pack a lot of flavor and muscle building protein.
Using steak seasoning blends adds a powerful punch of flavor while keeping calories and cost down. Rub a little olive oil on your chops or steaks then rub on some steak seasoning for easy perfection. Or make your own blend such as garlic powder, cumin, paprika, sea salt, pepper, etc. For burgers, mix in the same seasoning blends as well as 2 T of Braggs, soy sauce, or your favorite steak sauce per pound of meat
For your sides, the sky’s the limit. Don’t about forget the Avocado Cucumber Broccoli Slaw recipe that makes a perfect accompaniment to that backyard meal. Or dress your chopped and cooked potatoes with a homemade vinaigrette for a delicious and healthy salad. Place your favorite fresh veggies in a foil pack with fresh garlic, herbs, and a drizzle of olive oil and throw them on the grill to steam for about 20-30 minutes.
Let us not forget the dessert. Either start a small, well monitored campfire or use your bbq grill or even your microwave to make the ever popular, no camping can be without, traditional s’more. However timeless this treat maybe, there is always room for improvement. Try different types of crackers, chocolate, and marshmallows to personalize your experience. Remember, the darker the chocolate the better it is for you, so look for as high of a cacao percentage as your taste buds allow. Get creative, add some strawberry slices in the middle or skip the crackers and just throw together some berries, mini marshmallows, tiny chunks of chocolate and a dollop of whipped cream for a satisfying alternative.

Avocado Cucumber Broccoli Slaw
1 cup low fat plain yogurt
2 T Braggs Liquid Amino (or soy sauce)
1/2 cucumber, skinned and chopped
1 avocado, peeled and pitted
2 stems green onion, chopped
1/8 cup cilantro
1/2 tsp cumin, pepper
1/4 tsp sea salt
1 bag broccoli slaw mix
Add all ingredients except for broccoli slaw mix into a blender or food processor or use an immersion blender. Blend until smooth. Mix with broccoli slaw and refrigerate until ready to serve.
